Prepare the batter, in a bowl, mix grated cucumber, idli rava, coconut, curd, green chilies, and salt. let it rest for 10 minutes.
Check consistency, the batter should be thick, add a little water if needed. if using, mix in a pinch of baking soda.
Prepare tempering, heat ghee or oil, add mustard seeds, and let them splutter. mix this into the batter.
Fill the molds, pour the batter into the molds, filling them about ¾ full.
Steam the idlis, steam in an idli cooker or steamer for 15-20 minutes until a knife inserted comes out clean.
Serve hot, remove from molds and serve warm with coconut chutney or sambar for a delicious South Indian breakfast.
