Prepare the methi leaves, wash methi leaves horoughly, chop finely, and sprinkle a little salt. let it sit for 5 minutes, then squeeze out excess water to reduce bitterness.

Combine dry ingredients, in a large bowl, mix wheat flour, turmeric, red chili powder, coriander powder, carom seeds, and salt.

Add methi and yogurt, add the prepared methi leaves and yogurt to the flour mixture.

Mix and knead, gradually add water while kneading to form a soft, pliable dough. add oil or ghee during kneading for smoothness.

Rest the dough, cover the dough with a damp cloth and let it rest for 20-30 minutes.

Check consistency, ensure the dough is soft but not sticky. if sticky, sprinkle some flour and knead again.
