Prepare the Dough, mix maida, a pinch of salt, and 2 tablespoons of oil or ghee in a bowl. add water gradually and knead into a smooth dough. cover and let it rest for 20 minutes.
Make the Hing Filling, heat oil in a pan and add hing, fennel seeds, black pepper, and cumin powder. mix in roasted dal powder, salt, and chili powder. cook briefly and let it cool.
Shape the Kachoris, take small portions of dough and filling. flatten a dough ball, add the filling, and seal it. gently press into a disc shape.
Fry the Kachoris, heat oil in a pan and fry the kachoris on medium heat until golden and crispy. cook in small batches for best results.
Serve Hot, drain excess oil and serve the kachoris hot with tamarind or mint chutney, or potato curry.
