Here's how to make authentic South Indian Kadala Curry at home in just 8 easy steps.
Pressure cook chickpeas, drain soaked black chickpeas and pressure cook with 1½ cups of water and salt for 5-6 whistles until soft.
Prepare coconut masala, roast grated coconut, fennel seeds, garlic, and ginger in coconut oil until golden brown. grind into a smooth paste with a little water.
Temper the spices, heat coconut oil, add mustard seeds, dried red chilies, and curry leaves. let them splutter.
Saute onions & tomatoes, add chopped onions, saute until golden, then add tomatoes and cook until soft.
Add spices, mix in turmeric, chili powder, coriander powder, and garam masala. cook for a minute.
Combine everything, add the cooked chickpeas, ground coconut masala, and some water. simmer for 10 minutes.
Adjust consistency & garnish, check salt, adjust thickness, and garnish with coriander leaves.
Serve & enjoy, serve hot with puttu, appam, dosa, idiyappam, or rice.
