Prepare the dough, mix wheat flour, maida, turmeric, salt, and ghee. knead into a soft dough and rest for 30 minutes.

Cook the chana dal, boil soaked chana dal until soft but not mushy. drain and mash into a smooth paste.

Prepare the puran or filling, cook mashed dal with jaggery and ghee until thick. add cardamom and nutmeg powder, then cool.

Divide and shape, make equal-sized balls of dough and filling. flatten the dough, place the filling inside, and seal the edges.

Roll the poli, dust with flour and gently roll into a thin circle without breaking the filling.

Cook the puran poli, cook on a hot tawa until golden spots appear, applying ghee on both sides.

Serve and enjoy, serve warm with ghee, milk, or butter for a festive treat.
