Prepare the Dough, in a bowl, mix milk powder, all-purpose flour, and baking soda. add ghee and rub it in until the mixture resembles breadcrumbs. slowly add milk to form a soft dough. Let it rest for 10 minutes.
Shape the Jamuns, after resting, gently knead the dough for a minute. Divide the dough into small, smooth balls. ensure there are no cracks to avoid bursting during frying.
Make the Sugar Syrup, in a separate pan, dissolve sugar in water over medium heat. once it boils, add cardamom powder and saffron or rose water for extra flavor. let it simmer for 5 minutes and set aside.
Heat, oil or ghee in a deep pan on medium low heat. the oil should not be too hot, as this will brown the jamuns quickly but leave them raw inside.
Fry the Jamuns, gently drop the prepared dough balls into the hot oil. fry on low heat, turning constantly, until they turn golden brown and cook evenly from the inside.
Drain the Jamuns, once fried, remove the jamuns from the oil and place them on paper towels to remove excess oil.
Soak in Syrup, immediately transfer the warm jamuns into the warm sugar syrup. let them soak for at least 1-2 hours so they absorb the syrup and soften.
Serve the Gulab Jamuns warm or chilled, garnished with chopped nuts or extra saffron if desired.
