Make the Dough, crumble khoya in a bowl and knead well. add flour, baking soda, ghee, and a little milk to form a soft dough. let it rest for 10 minutes.
Shape the Jamuns, roll small portions of the dough into smooth, crack-free balls.
Prepare Sugar Syrup, heat sugar and water in a pan until fully dissolved. add cardamom, rose water, and lemon juice, then simmer for 5-7 minutes.
Heat Oil, warm oil or ghee on low-medium heat. test with a small dough piece it should rise slowly without browning too fast.
Fry the Jamuns, gently add the jamuns to the oil and fry on low heat until golden brown.
Soak in Syrup, let the fried jamuns cool slightly, then soak them in warm sugar syrup for 1-2 hours.
Serve and Enjoy, garnish with nuts or saffron and serve warm or chilled. enjoy your homemade Gulab Jamun.
