Prep the Garlic, peel, wash, and dry the garlic cloves completely.

Roast the Spices, roast mustard, fennel, and fenugreek seeds for a minute. cool and grind coarsely.

Cook the Garlic, heat mustard oil till it smokes, cool slightly, then saute garlic till light golden.

Add Spices, mix in ground spices, chili powder, turmeric, salt, and lemon juice or vinegar.

Store It, put the mix in a clean jar, and keep it in sunlight for 2–3 days. shake daily.
