Cut leftover idlis into small cubes or crumble them as preferred.
Heat oil in a large pan or skillet over medium heat.
Add mustard seeds to hot oil, then urad dal, chana dal, and red chilies; sauté until golden, adding green chilies and curry leaves for the last 30 seconds.
Stir in turmeric and red chili powder until well combined.
Add idli pieces, toss to coat with spices, and cook on medium heat, stirring occasionally, until crispy and golden brown.
Check the seasoning and add salt to taste.
Garnish with coriander leaves and serve hot with chutney or sambar.
