Caramelize the Onions, heat butter and oil, add onions, sugar, and salt. cook on low for 30-40 minutes until golden.
Deglaze the Pot, add wine and scrape the pot to release flavors.
Add Stock and Seasonings, pour in stock, add thyme, salt, and pepper. simmer for 20-30 minutes.
Prepare the Bread, toast baguette slices and rub with garlic if desired.
Assemble the Soup, fill bowls with soup, top with bread, and sprinkle cheese.
Broil and Serve, until the cheese melts and serve hot.
