Prepare the Brinjals, wash and cut brinjals into bite-sized pieces. place them in salted water to prevent browning.
Saute Aromatics, heat oil in a pan over medium heat. add mustard and cumin seeds; let them splutter. add chopped onions; saute until golden. stir in ginger-garlic paste cook for a minute.
Add Tomatoes and Spices, add chopped tomatoes cook until soft. mix in turmeric, red chili, and coriander powders; cook for 2 minutes.
Incorporate Brinjals, drain brinjals add to the pan. stir to coat with the spice mixture.
Adjust Consistency, if too dry, add a little water; simmer for 5 more minutes.
Garnish and Serve, with fresh coriander leaves. serve hot with rice or indian bread.
