Here's a simple 5 step recipe to make delicious curd rice at home.

Cook the Rice, cook 1 cup of rice until soft, using slightly more water than usual to make it softer. let it cool completely before mixing it with the curd.
Mix in the Curd, in a bowl, mix the cooked rice with 1-1.5 cups of fresh curd and a bit of milk if needed to get a creamy consistency. add salt to taste.
Prepare the Tempering, in a small pan, heat 1 tablespoon of oil or ghee. add 1/2 teaspoon mustard seeds and a pinch of hing. let them splutter, then add 1-2 dried red chilies, a few curry leaves, and 1/2 teaspoon urad dal. fry until the dal turns golden.
Add Tempering to the Rice, pour the tempering over the curd rice mixture, stirring well to blend all the flavors.
Garnish and Serve, add a garnish of chopped coriander leaves or pomegranate seeds for extra flavor and a touch of color. serve chilled or at room temperature.
