Prepare the Dough, combine flour, salt, and oil, then add water gradually to knead a soft dough. rest for 20–30 minutes.
Make the Filling, grind green peas, then sauté with spices like cumin, fennel, coriander, garam masala, and hing until fragrant. cool.
Shape the Dough, divide the dough, flatten into circles, and place a spoonful of filling in the center.
Seal and Shape, gather and pinch edges to seal, then gently flatten into discs.
Flatten and Shape, gently flatten each stuffed dough ball with your palm, ensuring it remains sealed and doesn’t tear. press gently to shape it into a small disc.
Heat oil, in a pan on medium. test with a small dough piece for readiness.
Fry the Kachoris, fry on low-medium heat until golden and crispy. drain excess oil.
enjoy hot kachoris with your favorite chutney.
