Soak the Lentils, rinse 1 cup of split yellow moong dal or chana dal. soak it in water for 4-5 hours or overnight.
Prepare the Mixture, drain the dal and grind it into a coarse paste without adding water. add finely chopped onions, green chilies, ginger, curry leaves, cilantro, and salt. mix well.
Shape the Vadas, wet your hands and take a small portion of the mixture. shape it into a round ball, then flatten it slightly with your fingers to form a vada.
Heat the Oil, heat oil in a deep frying pan on medium-high heat. ensure the oil is hot enough by dropping a small portion of the dough; it should sizzle and rise to the surface.
Fry the Vadas, gently slide the vadas into the hot oil, a few at a time. Fry them until they are golden brown and crispy on all sides, about 4-5 minutes.
Drain Excess Oil, remove the vadas from the oil and place them on a paper towel to drain excess oil.
Serve, the hot dal vadas with chutney or sambar for a delicious snack.
