Whisk 1 cup yogurt with lemon juice, mustard oil, and spices, including cumin, coriander, turmeric, red chili powder, garam masala, and optional paprika and fenugreek.
Stir the ingredients together until well combined.
Add 250 grams of paneer cubes to the marinade and coat them gently.
Cover the bowl and refrigerate for at least 1 hour to allow the flavors to infuse.
Preheat your stovetop grill pan to medium-high heat.
Thread the marinated paneer cubes onto skewers or place them directly on a baking tray or grill pan.
Heat oil in a pan and grill the paneer cubes for 4-5 minutes on each side.
Ensure the paneer is slightly charred and cooked through.
After cooking, remove from skewers or tray and garnish with lemon wedges and fresh cilantro or mint.
Serve the hot Paneer Tikka with green chutney or your preferred dipping sauce.
