Here's how to make authentic bajre ki Khichdi at home.

Prepare the bajra and dal, wash and soak bajra for 4-5 hours, drain, and coarsely grind. wash moong dal and keep aside.

Saute the spices, heat ghee in a cooker, add cumin seeds, asafoetida, and turmeric, and saute until aromatic.

Cook the bajra and dal, add ground bajra, moong dal, salt, and 4 cups of water; mix well. add vegetables if using.

Pressure cook the khichdi, pressure cook for 4-5 whistles on medium heat, then simmer for 5 minutes. let the pressure release naturally.

Serve the khichdi, stir the khichdi, adjust consistency with hot water if needed, and serve hot with ghee, yogurt, or pickle.
