Roast the Brinjal and Tomatoes, wash the brinjals and tomatoes, apply some mustard oil, and roast them directly over an open flame or on a grill. roast until the skin is charred and the inside is soft.

Peel and Mash, once roasted, let them cool slightly. peel off the charred skin and mash the soft flesh in a bowl.

Add Flavorings, to the mashed brinjal and tomato mixture, add finely chopped onions, garlic, green chilies, salt, and mustard oil.

Mix Well, squeeze in some lemon juice and add chopped coriander. mix everything thoroughly to blend the flavors.

Serve, baingan Chokha is ready serve it with litti, roti, or steamed rice for an authentic Bihari meal.
