Prepare the Ingredients, gather rice noodles, vegetables, tofu or protein of choice, garlic, peanuts, lime, and thai sauces like soy sauce, tamarind paste, and chili sauce.

Cook the Noodles, soak rice noodles in hot water until soft. drain and set aside.

Add Vegetables and Sauce, toss in vegetables and cook briefly. add soy sauce, tamarind paste, and chili sauce, mixing well.

Stir-Fry Base, heat oil in a wok, saute minced garlic, and add tofu or protein. stir-fry until golden.

Combine Noodles and Garnish, add cooked noodles to the wok, tossing them in the sauce. garnish with crushed peanuts, lime wedges, and fresh cilantro. serve hot and enjoy.
