Prepare tamarind paste, soak tamarind in warm water for 10 minutes, then squeeze and strain the juice. boil it with turmeric, sambar powder, jaggery, and salt until thick.

Heat oil & temper spices, heat sesame oil in a pan, add mustard seeds, chana dal, urad dal, peanuts, dry red chilies, and curry leaves. let them splutter.

Add hing & tamarind paste, add asafoetida, then pour in the tamarind paste. cook on low heat until the mixture thickens and oil separates.

Mix with rice, add the cooked rice to the tamarind mixture and mix well, ensuring even coating.

Rest for flavor, let the rice sit for 10-15 minutes to absorb the flavors.

Serve & enjoy, garnish with fresh coriander or roasted sesame seeds and serve with papad or curd.
