Prepare the Batter, soak 2 cups of rice and 1 cup urad dal for 6 hours. grind to a smooth paste, ferment overnight, and add salt before cooking.

Make the Potato Masala, boil 3-4 potatoes, mash them, and set aside. heat oil in a pan, add mustard seeds, curry leaves, chopped green chilies, and onions. saute, then mix in the mashed potatoes with turmeric and salt.

Prepare Podi Powder, roast 2 tbsp chana dal, 2 tbsp urad dal, 5-6 dried red chilies, and 1 tsp sesame seeds. grind them with a pinch of salt to make a coarse podi powder.

Heat the Dosa Pan, heat a non-stick or cast iron pan. Pour a ladle of dosa batter in the center and spread it thinly in a circular motion.

Add Podi and Masala, sprinkle the podi powder evenly over the dosa while it cooks. place a portion of the potato masala in the center of the dosa.

Fold and Serve, once the dosa is crispy, fold it in half or roll it. serve hot with coconut chutney and sambar for an authentic South Indian experience.
