Here's how to make authentic Gujarati Style Khaman Dhokla at home in just 8 steps.
Prepare batter, in a bowl, mix besan, semolina, sugar, salt, turmeric, lemon juice, and water to make a smooth batter.
Add eno, just before steaming, add Eno or baking soda and mix gently until frothy.
Steam the batter, pour the batter into a greased steaming tray and steam for 15-20 minutes on medium heat.
Check for doneness, insert a toothpick; if it comes out clean, the dhokla is ready. let it cool slightly.
Prepare tempering, heat oil, add mustard seeds, green chilies, curry leaves, and sesame seeds.
Make sugar syrup, add water and sugar to the tempering and let it boil for a few seconds.
Pour over dhokla, cut the dhokla into squares and evenly pour the tempering mixture over it.
Garnish & serve, garnish with chopped coriander and serve with green chutney.
