Prepare the Chicken, grill, boil, or bake the chicken breast, then shred or cut it into bite-sized pieces.
Chop the Vegetables, dice bell peppers, cucumber, cherry tomatoes, and onion.
Mix the Dressing, in a bowl, whisk together greek yogurt, lemon juice, olive oil, mustard, salt, and black pepper.
Combine Everything, in a large bowl, mix chicken, chickpeas, vegetables, and nuts. pour the dressing over and toss well.
Serve & Enjoy, garnish with fresh coriander/parsley and enjoy your protein-packed chicken salad.
