Prepare the poha, wash poha in water, drain, and let it sit for 5 minutes to soften.
Make the mixture, in a bowl, mix softened poha, mashed potato, grated carrots, onions, chilies, coriander, turmeric, chili powder, and salt. add cornflour for binding and knead into a soft dough.
Shape the nuggets, take small portions of the dough and shape them into nuggets or patties.
Fry the nuggets, heat oil in a pan and fry the nuggets in batches over medium heat until golden and crispy.
Serve, drain the nuggets on paper towels and serve hot with ketchup or chutney.
