Prepare the potato filling, heat oil in a pan, add mustard seeds, curry leaves, green chilies, and ginger-garlic paste. add mashed potatoes, turmeric, salt, lemon juice, and coriander leaves. mix well and let it cool.
Shape the vadas, divide the potato mixture into equal portions and shape them into round balls.
Make the besan batter, in a bowl, mix besan, turmeric, chili powder, and salt. add water gradually to form a smooth, thick batter.
Coat & fry the vadas, dip each potato ball in the batter and deep-fry until golden brown. drain excess oil and set aside.
Toast the pav, heat butter on a tawa and toast the pav until slightly crispy.
Assemble the vada pav, slit the pav, spread dry garlic chutney or green chutney, and place the fried vada inside.
Serve & enjoy, serve hot with fried green chilies and chutneys for a perfect street-style snack.
