Mix Dry Ingredients, in a large mixing bowl, combine maida, sooji, salt, sugar, and baking soda. mix everything well.

Knead Soft Dough, gradually add water, and knead to make a soft, smooth, and non-sticky dough. Cover and let it rest for 10 minutes.
Roll the Bhaturas, divide the dough into small balls. roll each ball into a medium-thick oval or round shape using a rolling pin. do not make them too thin.
Fry Until Fluffy, heat oil in a deep pan. once hot, slide in the bhatura. Press gently with a slotted spoon to help it puff up. fry until golden and fluffy on both sides. drain on paper towels.
