Freeze the Watermelon, place watermelon cubes in a single layer on a tray and freeze for 2–3 hours until solid.
Blend Smoothly, add the frozen watermelon cubes to a blender with sugar and lemon juice.
Adjust Sweetness, taste, and adjust the sugar if needed for extra sweetness.
Freeze Again, pour the blended mixture into a container, and freeze for another 1–2 hours for a firmer texture.
Serve and Garnish, scoop out the sorbet, garnish with mint leaves if desired, and serve immediately.
