Soak the Saffron, take a pinch of saffron strands and soak them in 2 tablespoons of warm milk for 10-15 minutes to release the color and flavor.
Blend the Yogurt Base, in a blender, add 2 cups of chilled yogurt, 3-4 tablespoons of sugar, and a few ice cubes for a refreshing texture.
Add Flavorings,
Pour the saffron-infused milk into the blender along with ½ teaspoon of cardamom powder for a rich aroma and flavor.
Blend Until Smooth,
Blend the yogurt mixture on medium speed until it becomes smooth, creamy, and frothy.
Garnish the Lassi,
Pour the lassi into tall glasses. Garnish with a few saffron strands and chopped nuts like almonds and pistachios.
Serve, the kesar lassi immediately, chilled and refreshing, perfect for a hot day or special occasion.
