Make the Green Paste, blend mint, coriander, ginger, green chilies, tamarind pulp/lemon juice with a little water to make a smooth paste.

Strain It, strain the paste using a fine sieve to get a clear, flavorful liquid.

Add Spices, mix in roasted cumin powder, black salt, regular salt, and jaggery or sugar into the strained liquid.

Dilute with Water, add 3–4 cups of chilled water, and mix well. adjust salt and spice as needed.

Chill and Serve, keep it in the fridge for 1–2 hours. Serve cold with golgappe/pani puri for a delicious street-style experience.
