Heat the oil, heat 1 tbsp oil in a pan or wok over medium-high heat.
Scramble the eggs, pour the beaten eggs into the pan, scramble them quickly, and set aside.
Saute the aromatics, in the same pan, add a little more oil if needed. saute garlic and onions until fragrant and slightly golden.
Add the chicken & veggies, toss in the shredded chicken and mixed veggies. stir-fry for 2-3 minutes until the veggies soften.
Mix in the leftover rice, add the leftover rice to the pan, breaking up any lumps. stir well to combine everything evenly.
Add soy sauce & seasoning, pour in soy sauce, black pepper, and salt. mix well so the rice absorbs all the flavors.
Add the scrambled eggs, toss the scrambled eggs back into the pan and mix them evenly.
