Method to prepare Veg Momos:
Prepare the Dough: Mix 1 cup whole wheat flour and a pinch of salt in a bowl. Gradually add water and knead into a smooth dough. Cover and let it rest for 30 minutes.
Prepare the Filling: Heat oil in a pan. Add finely chopped vegetables. Stir-fry for a few minutes until the vegetables are slightly cooked but still crunchy. Season with salt, pepper, and any desired spices. Let the filling cool.
Divide the Dough: Divide the rested dough into small equal-sized balls. Keep them covered with a damp cloth to prevent drying.
Roll Out the Dough: Take a dough ball and roll it into a thin, small circle using a rolling pin. Keep the edges slightly thicker than the center.
Fill and Shape the Momos: Place a spoonful of the vegetable filling in the center of the rolled dough circle. Pinch and pleat the edges of the circle to enclose the filling, forming a pleated dumpling. Seal the top by twisting it gently.
Steam the Momos: Prepare a steamer and grease its surface with oil or place parchment paper. Arrange the shaped momos in the steamer basket, leaving some space between them. Steam the momos until they appear translucent and shiny.
Serve: Once steamed, remove the momos from the steamer. Serve hot with a dipping sauce like spicy tomato chutney or soy-vinegar sauce.
