Cook Quinoa, boil 1 cup quinoa with 2 cups water until soft. set aside.
Saute Spices & Onions, heat oil in a pan. add cumin seeds, then sauté onions till golden.
Add Veggies & Spices, add tomatoes, mixed veggies, salt, turmeric, and garam masala. cook till soft.
Mix Quinoa, add cooked quinoa to the pan, and mix gently with the veggies.
Garnish & Serve, cook for 2–3 minutes. garnish with coriander and serve hot.
