Prepare the Batter, in a bowl, mix besan, semolina, lemon juice, sugar, ginger-chili paste, salt, and water into a smooth, lump-free batter.
Steam the Dhokla, pour the batter into a greased plate or mold. steam for about 15–20 minutes on medium flame until a toothpick comes out clean.
Prepare the Tempering, heat oil, add mustard seeds, green chilies, and curry leaves. add a little water and pour this over the steamed dhokla.
Cut the dhokla into squares, garnish with coriander leaves, and serve with green chutney.
