Saute the onions & garlic, heat oil or ghee in a large pot, add chopped onions, and saute until golden. add minced garlic and cook for a minute.
Cook the meat, add chicken or lamb pieces and cook until they turn brown on all sides.
Add tomatoes & tomato paste, stir in chopped tomatoes and tomato paste, cooking until they break down into a thick sauce.
Spice it up, add all the spices turmeric, cumin, coriander, cinnamon, cardamom, cloves, black pepper, and salt. stir well to coat the meat.
Pour the broth, add bay leaves and pour in the broth. cover and let it simmer for 30-40 minutes until the meat is tender.
Add carrots & rice, stir in grated carrots and soaked rice. mix well to ensure the flavors blend evenly.
Cook the rice, cover the pot and cook on low heat for 20 minutes until the rice absorbs all the liquid and becomes fluffy.
Garnish and serve, garnish with roasted almonds and raisins. serve hot with yogurt, salad, or a side of spicy Yemeni sahawiq sauce for an authentic touch.
