Heat oil and saute curry paste, in a pan, heat oil on medium flame, add thai curry paste, and saute for 1-2 minutes until fragrant.

Add Coconut Milk, pour in half the coconut milk and stir well to blend with the curry paste. let it cook for 2 minutes.

Add Vegetables and Protein, add chopped vegetables and tofu or chicken. stir well and cook for a few minutes.

Pour in Broth and Season, add vegetable broth, soy sauce or fish sauce, and sugar. let it simmer for 5–7 minutes.

Add the Remaining Coconut Milk, pour in the remaining coconut milk, and let the curry cook for another 5 minutes until everything is tender.

Garnish with fresh basil leaves and serve hot with steamed rice or noodles. enjoy your homemade Thai curry.
