Boil the milk, pour the milk into a heavy-bottomed pan and bring it to a boil on medium heat. stir occasionally to prevent sticking.
Curdle the milk, once the milk boils, lower the heat and add lemon juice or vinegar gradually while stirring. the milk will curdle, separating into whey and solids.
Strain the chhena, strain the curdled milk using a muslin cloth or fine sieve. rinse the chhena under cold water to remove the acidic taste and squeeze out excess water.
Cook the chhena mixture, heat ghee in a non-stick pan. add the chhena and cook on low heat, stirring continuously for 5-7 minutes until it becomes slightly dry.
Add sweetener and flavoring, mix in jaggery powder or your chosen sweetener. stir well until it dissolves and blends with the chhena. add cardamom powder and mix thoroughly.
Shape and garnish, transfer the mixture to a greased plate or tray. press it evenly with a spatula. sprinkle chopped nuts on top and press lightly to set them.
