Prepare Ingredients, chop 3-4 ripe tomatoes, 1 onion, and 2-3 green chilies. gather 1 cup of cooked rice, curry leaves, mustard seeds, and dry spices like turmeric, red chili powder, and garam masala.

Saute Spices, heat 2 tablespoons of oil in a pan. add 1/2 teaspoon mustard seeds, curry leaves, and a pinch of asafoetida. let the seeds splutter.

Saute Aromatics, add onions and green chilies, cooking until soft. add 1 teaspoon ginger-garlic paste, saute for a minute.

Cook Tomatoes, add tomatoes, 1/4 teaspoon turmeric, 1/2 teaspoon red chili powder, and salt. cook until tomatoes form a thick paste.

Add Rice, with 1/2 teaspoon garam masala. mix gently and cook for 2-3 minutes on low heat.

Garnish and Serve, with fresh coriander and serve hot with raita or yogurt.
