In a pan, heat the oil over medium heat.
Add mustard seeds and let them splutter, then sauté urad dal until golden brown.
Add slit green chilies and curry leaves, and sauté for a minute until fragrant.
Add grated coconut and optional turmeric powder, stirring for 2-3 minutes until lightly toasted.
Add cooked rice and salt, then mix well to combine all the ingredients.
Garnish with chopped coriander and serve warm or at room temperature.
