Here’s a simple 5 step recipe to make soft Rasmalai at home using only milk and sugar.

Make Paneer, boil 1 liter of milk and add lemon juice or vinegar to curdle. strain it, rinse with cold water, and hang for 30 minutes to get soft paneer.

Shape the Paneer, knead the paneer for 5 minutes until smooth, then shape into small flat discs.

Cook the Discs, boil 1 liter of water with ½ cup sugar. add the paneer discs and cook for 15 minutes until they expand.

Make the Sweetened Milk, boil the remaining milk until it reduces by half. add ½ cup sugar and saffron.

Assemble and Chill, squeeze the discs, soak them in sweetened milk, and chill for 1–2 hours. enjoy your soft rasmalai.
