Here's how to delicious Rajasthani Dahi Bhindi at home in just 8 easy steps.
Prepare the bhindi, wash and dry the bhindi completely to avoid sliminess. cut them into 1-inch pieces.
Fry the bhindi, heat 1 tbsp oil in a pan, add bhindi, and saute until slightly crispy. remove and set aside.
Saute the spices, in the same pan, heat another 1 tbsp oil, add cumin seeds, and let them splutter. then, add chopped onions and saute until golden brown.
Cook the tomato puree, add pureed tomato, turmeric, red chili, coriander powder, and salt. cook until the oil separates.
Prepare the yogurt mixture, in a bowl, whisk curd with besan to prevent curdling. slowly add this mixture to the pan, stirring continuously.
Simmer the gravy, cook on low heat until the curd mixture thickens and blends well with the spices.
Add the bhindi, now, add the fried bhindi, mix well, and cook for 3-5 minutes so the flavors absorb.
Garnish & serve, sprinkle garam masala and fresh coriander. serve hot with roti or steamed rice.
