Here's how to make Bengali style Prawn Malai Curry at home in just 8 easy steps.

Marinate the prawns, coat the prawns with turmeric and salt. let them sit for 10-15 minutes to absorb the flavors.

Fry the prawns, heat mustard oil in a pan until it smokes slightly. lightly fry the prawns for 1-2 minutes on each side until golden. remove and set aside.

Prepare the base, in the same oil, add cumin seeds, bay leaf, and sugar. let them splutter. add chopped onions and saute until golden brown.

Cook the masala, add ginger-garlic paste and cook until the raw smell disappears. stir in the tomato puree, turmeric, red chili powder, and salt. cook until the oil separates.

Add coconut milk, lower the heat and pour in the coconut milk, stirring continuously. add green chilies and a little water if needed to adjust consistency.

Simmer the curry, let the curry simmer on low heat for 5-7 minutes to blend the flavors.

Add prawns & final touch, add the fried prawns to the curry and mix well. sprinkle garam masala and cook for another 2-3 minutes.

Serve Hot, turn off the heat and let the curry rest for a few minutes. serve hot with steamed basmati rice for an authentic bengali meal.
