Here's how to make One Pot Sambar Rice at home in just 9 easy steps.
Rinse and Soak, wash rice and toor dal together. soak them for 10 minutes.
Saute Tempering, heat oil or ghee in a pressure cooker. add mustard seeds, cumin seeds, dried red chili, curry leaves, and asafoetida. saute until fragrant.
Cook Onions & Tomatoes, add sliced onions and saute until golden. then add chopped tomatoes and cook until soft.
Add Vegetables & Spices, add chopped carrots, beans, and pumpkin. stir in turmeric and sambar powder.
Add Dal & Rice, drain the soaked rice and dal. add them to the cooker and mix well.
Pressure Cook, close the lid and pressure cook for 3-4 whistles on medium flame.
Mash & Adjust Consistency, once the pressure releases, open the lid, mix everything well, and mash slightly for a creamy texture.
Serve Hot, garnish with coriander leaves and serve hot with papad or pickle.
