Here's how to make delicious Mutton Curry at home this Eid in just 8 easy steps.
Heat the oil & temper the spices, heat oil or ghee in a pressure cooker or deep pan. add cumin seeds, cloves, cinnamon, and cardamoms. let them crackle for a few seconds to release their aroma.
Saute onions & green chilies, add chopped onions and slit green chilies. saute until the onions turn golden brown. this enhances the depth of flavor in your curry.
Add ginger-garlic paste, now add ginger-garlic paste and cook until the raw smell disappears. this will give the mutton a rich, aromatic base.
Add tomatoes & spices, pour in the pureed tomatoes along with salt, red chili powder, turmeric, and coriander powder. cook until the oil starts separating from the masala.
Add mutton & yogurt, add the mutton pieces and mix well with the masala. now, add whisked yogurt and cook for 5-7 minutes on medium heat until the mutton is well coated with spices.
Pressure cook or slow Cook, add 1 cup of water in the mutton, close the lid, and cook for 5-6 whistles, if using pressure cooker. for slow cooking, add 2 cups of water, cover, and cook on low flame for 1.5-2 hours until the mutton becomes tender.
Add garam masala & simmer, once the mutton is cooked, add garam masala and let it simmer for another 5 minutes. this enhances the flavor of the curry.
Garnish & serve, turn off the heat, garnish with freshly chopped coriander leaves, and serve hot with naan, roti, or steamed rice.
