Here’s how to make Minty Chicken Pulao at home in 9 easy steps.
Prepare the mint paste, blend mint leaves, green chilies, and a little water into a smooth paste.
Saute whole spices, heat ghee or oil in a pressure cooker or pot, add cumin seeds, bay leaf, cloves, cinnamon, and cardamom. let them sizzle.
Cook onions & ginger-garlic paste, add sliced onions and saute until golden brown. then add ginger-garlic paste and saute until fragrant.
Add chicken & spices, add chicken pieces, turmeric, garam masala, and salt. cook until the chicken turns white.
Mix in tomatoes & yogurt, stir in chopped tomatoes and cook until soft. add yogurt and mix well.
Incorporate mint paste, add the blended mint paste and mix everything together. cook for 2-3 minutes.
Add rice & water, drain soaked rice and add it to the pot. pour 2 cups of water, adjust salt, and mix gently.
Cook the pulao, cover and cook for 2 whistles in a pressure cooker or until water is absorbed if using a regular pot.
Fluff & serve, once done, fluff the pulao with a fork and serve hot with raita or salad.
