Roast the Oats, dry roast the oats in a pan for 2–3 minutes on a low flame until lightly golden, then set aside.

Saute Spices and Vegetables, heat oil in a pan, add cumin seeds, and let them splutter. add onions, green chilies, carrots, peas, and tomatoes. saute for 3–4 minutes.

Add Spices, mix in turmeric powder, red chili powder, and salt. cook for another minute until the spices blend well with the veggies.

Add Water, pour 2 cups of water into the pan and bring it to a boil.

Cook the Oats, and add the roasted oats to the boiling water. cook while stirring continuously for 4–5 minutes until the oats soften and absorb the water.

Garnish and Serve, turn off the heat, garnish with fresh coriander leaves, and serve hot.
