Heat Oil & Temper, in a pan, heat 1 tsp coconut oil, add mustard seeds, curry leaves, and slit green chili.

Saute Aromatics, add sliced onions and sauté until golden. stir in ginger-garlic paste and cook until fragrant.

Cook Tomatoes & Spices, add chopped tomatoes, turmeric, coriander powder, black pepper, and salt. Cook until tomatoes soften.

Add Chicken & Simmer, add chicken pieces, mix well, and cook for 3-4 minutes until slightly browned.

Pour Thin Coconut Milk, add thin coconut milk, cover, and let it simmer for 10-12 minutes until the chicken is tender.

Finish with Thick Coconut Milk, lower the flame, add thick coconut milk and garam masala, and simmer for 2 minutes, don’t boil.

Serve Hot, garnish with fresh curry leaves and serve with steamed rice or appam.
