Roast and blend the hazelnuts, roast hazelnuts in an oven at 180°C for 10 minutes until fragrant. let them cool, remove the skins by rubbing them in a towel, and blend into a fine paste or butter.
Heat the milk and cream, in a saucepan, heat milk, heavy cream, and half the sugar on medium heat until warm. stir in the hazelnut paste and let it infuse for 10-15 minutes.
Temper the egg mixture slowly add a ladle of warm milk into the egg mixture while whisking. gradually mix everything back into the saucepan.
Cook the ice cream base, heat on low-medium until the mixture thickens and coats the back of a spoon. remove from heat and stir in vanilla extract.
Chill the mixture, strain the mixture to remove any lumps and refrigerate for at least 4 hours or overnight.
Churn and freeze, pour the ice cream mix into a container, freeze, and stir every 30 minutes for 3-4 hours until creamy.
