Prepare the Cheesecake Filling, mix cream cheese, sugar, and vanilla until smooth. fold in whipped cream.
Make the Biscuit Base, crush biscuits, mix with melted butter, and press into a tin. chill for 30 minutes.
Add Caramel, spread caramel sauce over the filling and mix gently.
Set the Cheesecake, pour over the biscuit base and refrigerate for 6 hours or overnight.
Garnish & Serve, drizzle caramel, add nuts or chocolate, slice, and enjoy.
