Prepare the Chicken, clean and dry the chicken pieces, then marinate them with salt, pepper, garlic, ginger, and soy sauce for 30 minutes.
Make the Batter, mix cornstarch, flour, a beaten egg, and a little water to make a thick batter that coats the chicken well.
Coat the Chicken, dip the marinated chicken into the batter, ensuring it's fully covered. shake off any extra batter.
First Frying, fry the chicken in medium-hot oil until golden and cooked through. remove and drain on paper towels.
Double Fry for Crunch, fry the chicken again on high heat for 2–3 minutes until extra crispy.
Make the Sauce, mix gochujang, honey, soy sauce, vinegar, and garlic in a pan. heat until it thickens, adjusting flavors as needed.
Toss and Serve, coat the crispy chicken in the sauce, garnish with sesame seeds and green onions, and serve hot.
