Drain and press the tofu to remove moisture, then cut it into bite-sized cubes.
Marinate the tofu cubes in a mixture of soy sauce, rice vinegar, and maple syrup (or honey) for at least 15 minutes, stirring occasionally.
After marinating, pat the tofu dry, coat it in cornstarch, and then roll it in sesame seeds.
Heat oil in a skillet, fry tofu cubes in batches for 3-4 minutes per side until golden and crispy, then drain on paper towels.
Toss the crispy tofu with sauce or serve it on the side, and garnish with green onions, sesame seeds, and cilantro if desired.
