Slice the potatoes thinly, wash and peel the potatoes. use a sharp knife or mandoline slicer to cut thin, even slices.

Soak in cold water, rinse the slices in cold water to remove excess starch. soak for 30 minutes with 1 tsp salt and ½ tsp turmeric for better crispiness.

Drain and season, remove chips using a slotted spoon and drain on paper towels. sprinkle with salt, black pepper, chili powder, or chaat masala while warm. let cool and enjoy crispy homemade potato chips.

Heat oil for frying, heat oil in a deep pan or fryer to 350°F. test by dropping a small slice, if it sizzles immediately, the oil is ready.

Fry in batches, fry the potato slices in small batches to avoid overcrowding. stir occasionally and fry until they turn golden and crispy.

Drain and dry the slices, drain the potato slices and pat them dry completely using a clean towel. this prevents excess oil splattering while frying.
